Last week at Vons....they had 10 pounds of potatoes for only
$0.99! Needless to say, I bought 20 POUNDS of potatoes.
Now...what's for dinner this week??

Monday--Left over baked chicked, mashed potatoes, dressing, corn
Tuesday--Potato Soup
Ingredients
Just using potatoes and a package of soup mix (too easy!)
Wednesday--Corn and Potato Mini Pancakes w/Salsa

Ingredients
- 2 cups mashed Idaho potatoes (prepared according to package directions using half of a 22 oz. bag frozen Idaho mashed potatoes)
- 2 cups frozen corn kernels (thawed) or cooked corn cut off the ear
- 1 egg, slightly beaten
- 1 cup seasoned bread crumbs
- 1/2 cup canola oil (for frying)
Ingredients
- 6 large Russet potatoes, sliced into 1/4 inch rounds
- 1 ham steak (about 1.5 pounds) cut into cubes
- 1 can (10 3/4 ounces) condensed cream of mushroom soup, undiluted
- 1 soup can of water
- 1 cup (4 ounces) shredded cheddar cheese
- Grill seasoning for taste
Friday--Pizza Night!!!
No more potatoes!!!
