Today (Monday), I'm actually making a HUGE feast for a
friend who just had a baby (and has two other kids at home).
I'm making HER:
Honey Glazed Ham
REAL mashed potatoes
sweet potato casserole
corn on the cob
REAL macaroni and cheese
green beans
dinner rolls
pumpkin pies
NOW...my family, we're eating a little different
(although, I'll be sampling alot from the above menu!):
I cooked some chicken breasts in the crock pot this weekend and they're ready
to make SOMETHING with.
Monday--Chicken salad pasta
I actually shread two of the chicken breasts, add noodles (macaroni already cooked),
a few squirts of honey mustard, a few spoons of mayo, a few teaspoons of
sweet relish, dashes of salt, pepper, and celery salt...and the secret
ingredient would be SUGAR (keep adding until it tastes so yummy!)
mix it up and keep in the fridge.
Tuesday--Chicken salad pasta leftovers
Wednesday--Chicken Enchiladas
I take more of those chicken breasts that were already cooked, shred it, and put it in a BIG
mixing bowl. Add a can of cream of chicken soup, a few heaping spoons of
sour cream, enchilada sauce, salsa, and shredded cheese.
Stir it up.
Wrap in tortilla shells...keep lining them up in a pyrex dish.
Add a little sauce and sprinkle more cheese on the tops...
and bake at 350 until the cheese is all melted.
so yummy!
Thursday--Enchilada leftovers
Friday--Pizza night for my boys and date night
at El Jefe's with my hubby where we use
our Restautant.com gift certificates.
